How to quickly make the best potato salad to help celebrate this Labor Day

Feeding a hungry crowd this weekend? Need a crowd pleaser you can just pull out of the fridge and serve that won't keep you in the kitchen too long? 

This is our favorite recipe for good ol' fashioned potato salad! Enjoy!

Ol' Fashioned Potato Salad (Download a pdf copy of the recipe here!)
6-8 potatoes, peeled and diced (~ 3 lbs)
6-8 hard boiled eggs
1 cup sour cream
1 tbsp of mustard
2 tsp salt
1 batch of homemade salad dressing (see accompanying recipe below)
1/2 cup of chopped onions
1/4 cup or more milk or cream
Salt and pepper to taste

Instructions
Place steamer basket in the bottom of the Instant Pot* and add water to just below the basket.
Add diced potatoes to the Instant Pot in 4 layers, sprinkle each layer with 1/2 tsp of salt.
Secure the instant pot lid and turn the valve to sealing.
Select high pressure/manual and set timer to 8 minutes.
While potatoes are cooking, make homemade salad dressing.
When the timer beeps, quick release the pressure. Let steam fully disperse and drain the water.
Spread the potatoes on a cookie sheet to cool.
In a large bowl, pour cooked salad dressing over potatoes,
Add sour cream, diced eggs, mustard salt and pepper.
Add milk or heavy cream to reach desired consistency.
Add chopped onions, if desired.
Stir well, cover, refrigerate a few hours to allow flavors to blend.
*If you do not have an Instant Pot, steam on stovetop for 10 min. 

Homemade Salad Dressing (Download a pdf copy of the recipe here!)
3/4 cup water
1/4 cup vinegar
1/3 cup flour
1 tsp salt
1 tsp sugar
2 beaten eggs
1 cup olive oil or vegetable oil

Instructions
Mix water and vinegar in a saucepan. In a bowl combine flour, salt and sugar. Stir flour mixture into water and vinegar and heat over medium high heat, stirring constantly.
When it thickens, quickly add beaten eggs and olive oil, and stir to blend.
Heat to a simmer, stirring vigorously to blend the oil in and prevent clumping.
Continue cooking and stirring for at least one full minute to ensure eggs are completely cooked.
Cool before using.
