Rumex acetosa (45 days, baby; 60 days, full) This perennial gourmet leafy green is a lemony, tangy taste sensation for salads, braising greens, soups and stews. Bright green, succulent, slender spinach-like leaves up to 8" long are easy to harvest.
Excellent overwintering addition to your perennial garden, it'll gift you back as soon as the snow melts with early gourmet sprigs of tender, mild spring greens. Hardy perennial; can also be grown as an annual.
Growing Notes
Can be spring or fall sown. Direct seed in early spring as soon as the soil can be worked. Or start seed indoors 3 weeks before last frost for transplants. Plant in full sun with good drainage. plant 1" apart, 1/4” deep. Thin to mature plant spacing of 8-12" apart.
Grow in well-drained soil with full sun or partial shade. Water deeply for good leaf production. Every 3-4 years, divide the clumps in spring or fall to encourage new growth. Remove seed stalks, like rhubarb, to encourage growth and prevent it from becoming a weed. Will readily self-sow. Does well in pots/container gardens.
