Goldini zucchini is at it's prime when they reach 1 lb, which is 2X larger than most zucchini varieties! More food with less effort! They're still good for slicing and drying at the 3 lb stage, so you can easily stock your pantry with zucchini powder to add to your soups, stews, casseroles. Use zucchini flour for quick breads, substituting for a portion of the flour.
