Cucurbita pepo (35-55 days) This open-pollinated golden yellow zucchini matures at 35-55 days from direct seeding, depending on growing conditions. Bred by Carol Depp in the Pacific Northwest, she touts them as “quite possibly-- the most productive on the planet.” They're at their prime when they reach 1 lb, which is 2X larger than most zucchini varieties! More food with less effort! They're still good for slicing and drying at the 3 lb stage, so you can easily stock your pantry with zucchini powder to add to your soups, stews, casseroles. Use zucchini flour for quick breads, substituting for a portion of the flour.
