Asparagus officinalis Viking is said to be the best asparagus overall for cold-climate growing. Beloved for its tender, tasty young shoots, asparagus is one of the first harvestable crops after a long winter. This perennial is rich in B vitamins, vitamin C, calcium, and iron. And fresh-picked spears are far more alive, tender, tasty, and nutritious than store-fare. Viking is an open-pollinated selection from the heirloom ‘Mary Washington’ developed in Ontario, Canada. It yields better and much superior to its parent, sporting vigorous growth and heavy yields. It is a perfect choice for asparagus lovers!
Requires 2-3 years from seed to harvest; once established, this perennial needs very little maintenance. Seeds take up to 3 weeks to germinate. Can be sown indoors 10 to 14 weeks before the target set-out date, after the danger of frost. Start in full sun with adequate water in rich, well-drained soil. Sow 1/2” deep. After last frost, plant in an outdoor bed in full sun with rich soil, 2-3 feet apart in each direction and 2-3 inches deep.
